If the plants aren't healthy enough, they could die if you start picking on the leaves.

You need to dry them out for starters, which is often done easily by putting them on a cookie sheet, and baking them for 2 to 4 hours at 170 degrees Fahrenheit. Once you have dried them, you are completely ready to use them in your cooking.

Setting it up in the first place takes a little work to get the water drainage right, and choosing the herbs you want to grow. From then on all that is left is to reap the herbs and then dry them.
